Biodiversity & Water Management
Our 28-acre estate supports biodiversity with pollinator-friendly planting, estate beehives, and re-wilding zones. We actively manage our woodland, ponds, and boundary areas to promote healthy ecosystems. Water-saving initiatives include dynamic dual-flush systems in bathrooms and flood management in collaboration with the National Trust and local partners.

Waste Reduction & Circular Economies
We live by “Reduce, Reuse, Recycle” throughout the hotel and estate. Say goodbye to single-use plastics, as we’ve replaced disposables with eco toiletries, reusable alternatives, and aluminium packaging. Coffee pods and cooking oil are recycled through partnerships, while composting and strategic kitchen practices such as carcass-balance cooking and locally sourced seasonal produce help minimise food waste.

Ethical Sourcing
Our Michelin-starred restaurant, led by Michael Caines MBE, celebrates a plant-rich, seasonal menu sourced from local and regional farms practising regenerative agriculture. Seafood is responsibly caught under the Seafood Responsible Fishing Scheme. Through education programmes and collaborations, the team connects guests and local college students with sustainable farming and cooking.

Winemaking with Purpose
Our vineyard uses low‑intervention techniques, including natural sheep grazing to enhance soil health, while deliberately preserving wildlife habitats around the vines. The wine making process uses three parts of the press to reduce by-product waste. Rosé is made from the second press of the Classic Cuvée, and the Gin and Eau de Vie from the grape pomace.

As custodians of a Grade II‑listed Georgian estate, we have actively restored, and continue to maintain, historical features such as the Lady’s Walk restoration to pond conservation. This year we have launched Nature Walks in association with Wild East Devon’s local countryside manager James Chubb to raise awareness of the ecologically sensitive Exe Estuary and Jurassic Coast.
