The Lympstone Manor Estate vineyard is planted with Pinot Noir, Meunier, and Chardonnay grapes, the classic varieties utilised to produce high-quality bottle-fermented sparkling wines, our main activity. Depending on climate and vintage, these same grapes provide us with the opportunity in the best years also to make small quantities white, rosé, and red wines, too, but only when conditions allow.

Cuvée tasting note
The second release of Lympstone Manor Cuvee is a blend of Pinot Noir, Pinot Meunier and Chardonnay from the 2021 harvest, and 2020 reserve wines aged in old French Oak. The resulting wine is richly layered, showcasing primary fruits of red apples and quince amidst secondary flavours such as a toasted brioche, minerality and vanilla.

The first release of still Chardonnay from our vineyard is due to the fantastic level of fruit ripeness from an exceptional vintage. The resulting wine delivers an attractive style with subtle notes of almond, toasted oak and some spice. It is very textural and the palate has a buttery richness with well-integrated fruit, is beautifully balanced with bright acidity and a lengthy persistent finish.

The “Spirit of Lympstone Manor” is a unique Eau de Vie de Marc distillation using the grape pomace from the Pinot Noir, Meunier and Chardonnay grown in the Lympstone Manor vineyard after the grapes have been pressed during the winemaking process.
The resulting spirit is incredibly aromatic, with intense floral and cinnamon notes, soft cherry fruit flavours and a smooth finish. Distilled exclusively for Lympstone Manor by Master Distiller Leigh Kearle.
